Now that spring is in the air, it’s time to get this super simple and delicious butter bean mash recipe into your weekly meal planning. This recipe is so easy to make and is loaded with protein, not to mention it’s also a nutritious alternative to mashed potatoes. We love this butter bean mash as it’s a great way to get in some gut microbiome-loving fibre, especially if you eat it frequently.

💡 Garlic is low in calories and rich in vitamin C, vitamin B6, and manganese. It also contains trace amounts of various other nutrients.

🍽 2 serves | ⏱ 20 minutes


  • 60 ml olive oil
  • 1-2 cloves of garlic (finely diced) (we love garlic so maybe even 4)
  • 1 bunch of fresh rosemary, lemon thyme or oregano (chopped)
  • Grated zest of 1 lemon (and juice)
  • 3 x 400-gram cans of butter beans
  • Salt & pepper (to taste)


  1. Heat olive oil in a small/medium saucepan and sauté the garlic.
  2. Add your choice of herbs and lemon zest and warm through (no need to cook).
  3. Drain the beans & rinse well under a tap.
  4. Add beans to the pan and warm through, stirring and squishing with a wooden spoon or potato masher.
  5. Season to taste.
