🍽 4 serves | ⏱ 30 minutes


  • 500g white potatoes
  • 100ml milk
  • 4 Barramundi fillets (skin on)
  • 1 bunch of broccolini, trimmed
  • 2 tablespoon olive oil
  • 1 garlic clove, thinly sliced
  • 1 lemon wedge
  • ΒΌ cup hazelnuts, roasted, chopped
  • ΒΌ cup parsley, roughly chopped


  1.  Chop potatoes into 3-4 cm pieces (skin on).
  2.  Boil in a large pot of salted water.
  3.  While boiling potatoes, place barramundi skin side up on a large plate. Drizzle with oil, salt & pepper and rub in.
  4.  Place Barramundi, skin-side down, in a large frying pan over medium heat. Cook for 5-6 mins until crisp. Turn and cook for a further 3-4 minutes or until just cooked through.
  5.  Drain potatoes, add milk and mash.
  6.  Trim broccolini into 5-7cm pieces and steam or blanch.
  7.  Heat oil in a pan, add garlic and parsley
  8.  On serving plates place mashed potato, then barramundi and broccolini. Add garlic/thyme drizzle.
  9.  Top with hazelnuts, parsley leaves & lemon wedge.
